Red Lentil Curry

Red Lentil Curry

No special equipment required.


  • 300g red lentils (dry)
  • 400g onions, diced finely
  • 500g carrots or marrow, diced finely
  • 4 tbsps curry powder
  • 400g chopped tomatoes (approx 1 can)
  • 1 pint vegetable stock (2 cubes)
  • 4 cloves garlic
  • salt


  1. Fry together the onion and the garlic
  2. Add the marrow/carrot and stir
  3. Add curry powder and stir well
  4. Stir in the tomatoes, lentils, and stock. Bring to the boil, then simmer for 30 mins. Season to taste
