Millionaire's Shortbread

Millionaire's Shortbread

Crumbly and chocolatey goodness

No special equipment required.

Ingredients

For the shortbread

  • 250g plain flour
  • 75g caster sugar
  • 175g softened butter

For the caramel

  • 100g butter
  • 100g light muscovado sugar
  • 800g condensed milk

For the topping

  • 200g plain chocolate
  • White chocolate to decorate

Method

For the shortbread

  1. Preheat the oven to 180°C, and grease a 13 x 9 inch tin
  2. Mix the flour, sugar, and butter in a bowl. Rub together until it resembles crumbs.
  3. Knead into a dough, and press into the tin.
  4. Prick the dough with a fork, and bake for 20 mins or until firm and lightly browned. Cool in the tin.

For the caramel

  1. Heat all ingredients in a pan until the sugar is dissolved.
  2. Bring to the boil, stirring constantly, then reduce the heat and simmer for 5 mins or until thick.
  3. Pour over the cooled shortbread and leave to cool.

For the topping

  1. Melt the chocolate in a bain marie, and pour over the cold caramel.
  2. If decorating, swirl in the melted white chocolate before the dark chocolate sets.
  3. Cool, then cut into squares and enjoy.
